I used to brew with the Kalita Wave the same as the Hario v60. That all changed after watching a bunch of videos with some of the new "fast" drippers and brewing champions. I new treat the Kalita very differently and it has become my go-to.
Recipie
- 16gr medium ground coffee
- You will need to play with this, but the goal is to finish the brew in a max of 3min - ideally about 2:30min.
- 256gr water just off boil - yes, a "fancy" gooseneck kettle really does help when pouring.
Instructions
- Start a timer
- Bloom the coffee with 50gr of water - pour pretty aggressively to get good agitation.
- If it's a light roast, bloom for 50s
- If it's a dark roast, bloom for 30s
- DO NOT STIR
- After the bloom, pour 103g of water in about 10s (your scale should read 153g). Let this drain completely!
- Pour the last 103g - again, in about 10s - for a total of 256g.
- Give the brewer a small swirl and let it drain down.
- Enjoy.
You can put your favorite dripper right on your favorite mug if you are making a single cup. But, if you are making 2 or more cups, a handled brewing carafe like those available from Hario is nice to have.
